But they also eat a lot of apple compotes, and most compotes currently available on the French market are made partly from apples. The fruits that do not have the aesthetic qualities required for the fresh market are used for compotes or juices, after selection of the best varieties. Nearly a fourth of the French apple production goes to processing.

Today, French consumers are particularly attentive to the labels and the origin of the products they buy. The origin of fresh products is easily identifiable in the stores but the origin of processed products is not as visible. This vagueness about processed products leads to significant imports of apples from other European countries. French apple producers have been committed for 25 years to production methods that are respectful of the environment and biodiversity, while complying with the Eco-responsible Orchards specifications. Today, 70% of the French apple growers – 1,400 apple and pear producers – have the Eco-responsible Orchards certification.
