Supply Dynamics and Geographic Sourcing
Currently, the majority of chanterelles in Germany originate from Belarus, with emerging supplies also arriving from Lithuania. Parhar elaborates that prices range from 9 to 12 euros per kilogram, slightly higher for ready-to-cook variants. Despite ample availability across all grades, demand has not matched expectations in the market.
Seasonal Variations and Market Outlook
In the wild mushroom category, chanterelles typically share the spotlight with porcini mushrooms. While products from Ukraine and Romania supplement the market, Parhar emphasizes that porcini mushrooms thrive more prominently in autumn. Anticipating a surge in demand from late August onwards, he also notes a seasonal peak leading up to Christmas, supported by air-freighted supplies from destinations like South Africa.

Beyond seasonal wild mushrooms, Ludwig-Reuter Ltd diversifies its offerings to include cultivated mushrooms sourced from Poland, king oyster mushrooms, and domestic shiitake.
