This year, 1,485 farming households cultivated garlic across 781 hectares, though persistent rains delayed the harvest slightly. Farmers have now ramped up harvesting efforts, revitalizing the local agricultural economy.

Uiseong’s cold-storage garlic is rich in allicin, a compound with proven antimicrobial, antiviral, and immune-boosting properties. Its strong flavor makes it ideal for kimchi fermentation, sauces, and processed foods, driving consistent demand.

Uiseong is moving beyond raw garlic sales by expanding into processed food partnerships. Recent collaborations include:
